Ingredients

  • 8 oz lo mein noodles
  • 1 lb chicken breast, sliced
  • 2 tablespoons sesame oil
  • 3 cloves garlic, minced
  • 1 cup broccoli florets
  • 1 red bell pepper, sliced
  • 1 cup snap peas
  • ¼ cup soy sauce
  • 2 tablespoons sesame seeds
  • 2 green onions, sliced

Instructions

  1. Cook lo mein noodles according to package instructions; drain and set aside.
  2. In a large skillet, heat sesame oil over medium-high heat.
  3. Add minced garlic and sliced chicken; sauté until the chicken is cooked through, about 5-6 minutes.
  4. Stir in broccoli, red bell pepper, and snap peas; cook until the vegetables are tender-crisp, approximately 3-4 minutes.
  5. Add cooked lo mein noodles and soy sauce into the skillet; toss to combine for a few minutes.
  6. Cook for an additional 2-3 minutes until everything is heated through. Serve garnished with sesame seeds and sliced green onions.

Notes

For a vegetarian version, substitute chicken with tofu. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
