Description
A quick and easy single-serve mug cake that mimics the flavor of a cinnamon roll, ready in just three minutes.

- 2 tablespoons almond flour
- 2 tablespoons coconut flour
- 1 tablespoon erythritol (or another sweetener)
- 1/2 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1 egg
- 1 tablespoon unsalted butter (melted)
- 1 tablespoon cream cheese (optional for frosting)
Instructions
- Choose a microwave-safe mug (10–12 oz). Melt the butter in the microwave for about 10–15 seconds and let it cool slightly. If using cream cheese, soften it at room temperature.
- Add the almond flour, coconut flour, erythritol, baking powder, and cinnamon into the mug. Stir with a fork to combine and break any clumps. Add the egg and melted butter, and stir until the batter is smooth.
- Place the mug in the microwave and cook on high for 60–90 seconds, checking at 60 seconds. If it’s not set, cook for an additional 10–15 seconds.
- Let the mug cake cool for 1 minute. If desired, top with softened cream cheese and serve warm.
Notes
For the best texture, serve warm. Optional toppings include extra cinnamon or chopped toasted pecans. Store in the fridge for up to 2 days, covered.
