Description

Delicious and easy-to-make Apple Cinnamon Streusel Muffins, perfect for breakfast or as a delightful afternoon snack.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1 cup milk
  • 1 1/2 cups diced apples
  • 1/2 cup brown sugar (for streusel)
  • 1/4 cup flour (for streusel)
  • 1 teaspoon cinnamon (for streusel)
  • 1/4 cup unsalted butter, softened (for streusel)

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine flour, sugar, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, whisk together melted butter, egg, and milk. Pour into dry ingredients and mix gently until combined. Fold in diced apples.
  4. For the streusel, mix brown sugar, flour, cinnamon, and softened butter until crumbly.
  5. Scoop muffin batter into prepared cups, filling 2/3 full, and sprinkle streusel on top.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Cool in the pan for a few minutes before transferring to a wire rack.

Notes

Serve warm with butter or cream cheese. Store in an airtight container for up to 3 days or freeze for up to 3 months.
