Description

A stack of warm, tender pancakes flecked with soft apple pieces and a hint of vanilla — fluffy, moist, and lightly sweet.


Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup plain yogurt
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1 cup peeled and diced apples
  • Butter or oil for frying

Instructions

  1. In a bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. Peel and dice the apples into small, even pieces.
  2. In another bowl, mix the yogurt, egg, and vanilla extract until smooth. Combine wet and dry ingredients until just mixed, then fold in the diced apples.
  3. Heat a skillet over medium heat and add butter or oil. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form, about 2–3 minutes, then flip and cook until golden brown, about 1–2 minutes more.
  4. Serve warm with maple syrup, honey, cinnamon, or extra apple slices.

Notes

For a richer finish, add a pat of butter or a spoonful of yogurt on top.
