Description

A simple, high-protein breakfast or light dinner that features soft, creamy cottage cheese blended with whisked eggs and melty shredded cheese.


Ingredients

  • 4 large eggs
  • 1 cup cottage cheese
  • 1/2 cup shredded cheese (cheddar or mozzarella)
  • 1/4 cup chopped green onions
  • Salt and pepper to taste
  • Butter or oil for greasing the baking dish

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a baking dish with butter or oil.
  2. In a bowl, whisk the eggs until smooth. Mix in the cottage cheese, shredded cheese, chopped green onions, and salt and pepper. Stir until evenly combined.
  3. Pour the mixture into the prepared baking dish and spread it evenly. Bake for 25-30 minutes, until the eggs are set in the center and the top is slightly golden.
  4. Remove from the oven and let cool for 5 minutes. Cut into squares and serve warm.
