- 1 cup cottage cheese
- 1/2 cup shredded cheese (cheddar or mozzarella)
- 1/4 cup chopped green onions
- Salt and pepper to taste
- 1 tablespoon olive oil or butter
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, whisk together the eggs, cottage cheese, green onions, salt, and pepper until well combined.
- Grease a baking dish with olive oil or butter. Pour the egg mixture into the baking dish and evenly sprinkle the shredded cheese on top. Bake for 25-30 minutes, or until the eggs are set and the top is golden brown.
- Let the baked cottage cheese eggs cool slightly before serving.
