Description

Nutritious and fluffy baked eggs mixed with creamy cottage cheese and green onions, perfect for a healthy breakfast or brunch.


Ingredients

  • 4 large eggs
  • 1 cup cottage cheese
  • 1/2 cup shredded cheese (cheddar or mozzarella)
  • 1/4 cup chopped green onions
  • Salt and pepper to taste
  • 1 tablespoon olive oil or butter

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together the eggs, cottage cheese, green onions, salt, and pepper until well combined.
  3. Grease a baking dish with olive oil or butter. Pour the egg mixture into the baking dish and evenly sprinkle the shredded cheese on top. Bake for 25-30 minutes, or until the eggs are set and the top is golden brown.
  4. Let the baked cottage cheese eggs cool slightly before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat individual portions in the microwave or in a hot oven until warmed through.
