Description

A cozy, family-friendly casserole that blends tender chicken, fluffy baked potatoes, and bright broccoli with creamy sour cream and sharp cheddar.


Ingredients

  • 4 baked potatoes, peeled and diced
  • 2 cups cooked chicken, shredded
  • 2 cups broccoli florets, steamed
  • 1 cup cheddar cheese, shredded
  • 1 cup sour cream
  • 1/2 cup chicken broth
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C). Peel and dice the baked potatoes into bite-sized pieces. Steam the broccoli until bright green and slightly tender. Shred the cooked chicken and cheddar cheese if not pre-shredded.
  2. In a large bowl, combine the diced baked potatoes, shredded chicken, steamed broccoli, shredded cheddar, sour cream, chicken broth, garlic powder, onion powder, salt, and pepper. Mix gently until evenly coated.
  3. Transfer the mixture to a greased baking dish, spreading it into an even layer. Bake for 25–30 minutes, until heated through and bubbly with melted cheese on top.
  4. Remove from the oven and let cool for a few minutes before serving. Taste and adjust seasoning if needed.

Notes

For a crunchy topping, sprinkle breadcrumbs mixed with melted butter over the casserole for the last 10 minutes of baking.
