- 1 cup rolled oats
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup chopped pecans
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, rolled oats, baking soda, and salt.
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth. Beat in the egg and vanilla until well combined.
- Gradually mix the dry ingredients into the wet mixture until just combined. Fold in the chopped pecans and chocolate chips if using.
- Drop tablespoonfuls of dough onto the prepared baking sheet, spacing them 2 inches apart. Bake for 10–12 minutes, until edges are golden and centers look set but soft.
- Allow cookies to cool on the sheet for 3–5 minutes before transferring to a wire rack to cool completely.
Notes
Serve warm with coffee or tea, or pack them in lunchboxes. For a deeper pecan flavor, toast the pecans briefly before adding.
