Ingredients

  • 1 cup rolled oats
  • 1 ripe banana, mashed
  • 1 cup almond milk (or any milk of choice)
  • 1/2 cup Greek yogurt (optional)
  • 1 tablespoon chia seeds
  • 1 teaspoon vanilla extract
  • 1 tablespoon honey or maple syrup (optional)
  • Sliced bananas and crushed graham crackers for topping

Instructions

  1. Peel and mash the ripe banana in a bowl until mostly smooth. Prepare oats, milk, yogurt, chia seeds, vanilla, and sweetener.
  2. In a mixing bowl, combine rolled oats, mashed banana, almond milk, Greek yogurt, chia seeds, vanilla extract, and sweetener. Stir until well combined.
  3. Transfer the mixture into a jar or container with a lid. Refrigerate overnight (or for at least 4 hours) to allow the oats to soak and thicken.
  4. In the morning, stir and add more almond milk as needed. Top with sliced bananas and crushed graham crackers before serving.

Notes
