Description

Warm, chewy cookies made with ripe bananas, oats, and peanut butter, perfect for a quick snack or breakfast.


Ingredients

  • 2 ripe bananas
  • 1 cup oats
  • 1/2 cup peanut butter (or any nut butter)
  • 1/4 cup honey (or maple syrup)
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon salt
  • Optional: chocolate chips or nuts

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Mash the ripe bananas in a bowl until smooth. Add oats, peanut butter, honey, vanilla, cinnamon, and salt. Mix until combined.
  3. Spoon the mixture onto the prepared baking sheet, flattening each mound slightly. Bake for 10–12 minutes until edges are golden.
  4. Let cookies cool for a few minutes before transferring to a wire rack to cool completely.

Notes

For a firmer cookie, you can add one egg or ground flax mixed with water.
