- 2 cups cooked rice
- 1 lb chicken breast, cubed
- 1/2 cup mayonnaise
- 1/4 cup sweet chili sauce
- 1 tbsp sriracha sauce (adjust to taste)
- 1 cup shredded lettuce
- 1/2 cup sliced cucumbers
- 1/2 cup shredded carrots
- 2 green onions, sliced
- Sesame seeds (for garnish)
Instructions
- Cook the rice according to package instructions and set aside to keep warm.
- Pat the cubed chicken dry, slice the cucumbers, shred the lettuce and carrots, and slice the green onions. Measure out the mayonnaise, sweet chili sauce, and sriracha.
- In a bowl, stir together the mayonnaise, sweet chili sauce, and sriracha until smooth, reserving half of the sauce for later.
- Heat a skillet over medium heat, add a drizzle of oil, and cook the cubed chicken until browned and cooked through, about 5-7 minutes. Toss with half of the sauce.
- Divide the cooked rice among bowls, top with sauced chicken, lettuce, cucumbers, and carrots. Drizzle with remaining sauce and garnish with green onions and sesame seeds. Serve immediately.
Notes
Serve with a lime wedge for brightness and store components separately for best quality.
