Description

A quick and flavorful weeknight meal featuring lean ground turkey, bright vegetables, and a creamy bang bang sauce served over rice.


Ingredients

Scale
  • 1 lb ground turkey
  • 2 cups cooked rice
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 2 tablespoons sriracha
  • 1 cup broccoli florets
  • 1 bell pepper, diced
  • 1/4 cup green onions, sliced
  • Salt and pepper to taste
  • Olive oil (for cooking)

Instructions

  1. Heat a large skillet over medium heat and add a splash of olive oil. Rinse and chop the broccoli, dice the bell pepper, and slice the green onions. Have the cooked rice ready and warm.
  2. Add ground turkey to the skillet, breaking it apart with a spoon. Cook until browned, seasoning with salt and pepper.
  3. In a small bowl, whisk together mayo, sweet chili sauce, and sriracha. Stir broccoli and bell pepper into the skillet with turkey and cook for 4-6 minutes until the veggies are tender-crisp.
  4. Divide warm rice among bowls and spoon the turkey and vegetable mixture over the rice. Drizzle with bang bang sauce and garnish with sliced green onions. Serve hot.

Notes

For extra flavor, add a squeeze of lime and top with sesame seeds or chopped peanuts.
