- 2 tablespoons olive oil
- 1 pound beef sausage, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups potatoes, peeled and diced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 1 teaspoon thyme
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Heat the olive oil in a large pot over medium heat. Dice the beef sausage, chop the onion, mince the garlic, and peel and dice the potatoes.
- Add the diced beef sausage to the hot oil and cook until browned and crisp, about 5–7 minutes.
- Add the chopped onion and minced garlic, and cook until the onion is translucent, about 3–4 minutes. Stir in the diced potatoes and thyme.
- Pour in the broth and bring to a gentle simmer. Cook until the potatoes are tender, about 15–20 minutes. Stir in the heavy cream and season with salt and pepper. Heat through for 2–3 minutes without boiling.
- Ladle the chowder into bowls and sprinkle with chopped green onions. Serve hot.
Notes
Serve with crusty bread or a simple side salad for balance. This chowder can be frozen but may change texture after thawing. Reheat gently and add extra cream if needed.
