- 1 can black beans, drained and rinsed
- 1/2 cup breadcrumbs
- 1/2 cup cooked rice
- 1/4 cup diced onion
- 1/4 cup chopped bell pepper

- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Olive oil for cooking
- Burger buns
- Toppings (e.g., lettuce, tomato, avocado)
Instructions
- In a large bowl, mash the black beans with a fork until mostly smooth.
- Add the breadcrumbs, cooked rice, diced onion, bell pepper, minced garlic, cumin, chili powder, salt, and pepper to the mashed beans and mix until well combined.
- Form the mixture into patties, about 1/2 inch thick. Heat olive oil in a skillet over medium heat and cook the patties for about 5-6 minutes on each side until golden brown and crispy.
- Remove the patties from the skillet and place them on burger buns. Top with your favorite toppings like lettuce, tomato, or avocado.
Notes
Leftover black bean burgers can be stored in an airtight container in the refrigerator for up to 3 days. They can also be made in advance and frozen for up to 3 months.
