Ingredients

  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup buttermilk
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cloves
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup eggnog
  • 1 cup powdered sugar
  • 1/2 cup unsalted butter, softened (for frosting)
  • 1 teaspoon vanilla extract (for frosting)
  • Ground nutmeg (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Cream together softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in eggs one at a time, followed by vanilla extract.
  3. In another bowl, combine flour, baking powder, salt, and spices. Gradually add to the creamed mixture, alternating with buttermilk, starting and ending with flour. Divide batter evenly between pans and bake for 25-30 minutes.
  4. For the eggnog buttercream, beat together softened butter, powdered sugar, eggnog, and vanilla extract until smooth. Once cakes are cool, frost as desired and garnish with ground nutmeg.

Notes

Store in an airtight container in the refrigerator for up to 5 days. For freezing, wrap layers tightly in plastic and store for up to 3 months.
