Description

A deliciously comforting dish that allows you to indulge in cheesy goodness without the carbs, using cauliflower as a low-carb substitute.


Ingredients

  • 1 head of cauliflower, cut into florets
  • 2 tablespoons butter
  • 1 cup cream cheese
  • 1/2 cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated parmesan cheese (optional)
  • 1/2 teaspoon paprika (optional)

Instructions

  1. Preheat the oven to 375°F (190°C). Steam the cauliflower florets until tender, about 5 to 7 minutes.
  2. Melt the butter in a medium saucepan over medium heat, then add cream cheese and heavy cream. Stir in garlic powder, onion powder, salt, and pepper until smooth.
  3. Mix in cheddar cheese until fully melted, then combine with the steamed cauliflower.
  4. Transfer to a greased baking dish, sprinkle with parmesan and paprika if desired, and bake for 15-20 minutes until golden brown and bubbly.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or oven.
