Ingredients

  • 1 cup shredded coconut
  • 1 cup all-purpose flour
  • 1 cup sugar
  • 4 large eggs
  • 1/2 cup milk
  • 1/4 cup butter (melted)
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a cake pan.
  2. In a large bowl, whisk together the sugar and eggs until light and fluffy.
  3. Add melted butter and vanilla extract, stir to combine. In another bowl, mix flour, baking powder, salt, and shredded coconut. Gradually add the dry mix to the egg-sugar mixture, alternating with milk. Stir until well combined.
  4. Pour the batter into the prepared pan and smooth the top. Bake for 25-30 minutes or until a toothpick comes out clean. Allow to cool in the pan for a few minutes before transferring to a wire rack.
