Description

Delightful appetizer or side dish featuring baked potatoes, crisp bacon, and melted cheese.


Ingredients

Scale
  • 4 large russet potatoes
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1/2 cup cooked bacon, crumbled
  • 2 green onions, chopped
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 400°F (200°C). Wash the potatoes thoroughly and pierce them with a fork.
  2. Bake the potatoes in the preheated oven for 45-60 minutes, until tender.
  3. Let the potatoes cool slightly, cut in half lengthwise, and scoop out some flesh.
  4. Brush the skins with olive oil and season with salt and pepper.
  5. Place the skins on a baking sheet and bake for an additional 10 minutes until crisp.
  6. In a bowl, mix the scooped potato flesh with cheddar cheese, bacon, and half of the green onions.
  7. Fill each potato skin with the cheesy mixture, packing it in.
  8. Return filled skins to the oven and bake for another 10 minutes until cheese is melted.
  9. Serve hot, topped with sour cream and remaining green onions.

Notes

Can be prepared ahead of time. Store leftovers in an airtight container for up to 3 days.
