Ingredients

  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup unsalted butter, softened
  • 1 1/2 cups white sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 3/4 teaspoon salt
  • 3 to 4 tablespoons sugar for rolling

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, stir together flour, baking soda, and baking powder. Set aside. In a large mixing bowl, cream together softened butter and sugar until smooth and fluffy. Beat in the egg, vanilla, and almond extracts. Gradually incorporate dry ingredients until combined.
  3. Roll rounded teaspoonfuls of dough into balls. Roll each ball in additional sugar. Place on ungreased cookie sheets, leaving space between each ball, and flatten each cookie slightly.
  4. Bake in preheated oven for 8 to 10 minutes, or until light golden. Let cool on wire racks.

Notes

For best texture, use softened butter. Dough can be frozen for up to 3 months.
