- 1 cup rolled oats
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 cup milk (dairy or non-dairy)
- 2 ripe bananas (mashed)
- 1 tablespoon honey or maple syrup
- 1/2 teaspoon vanilla extract
- 1 cup blueberries (fresh or frozen)
Instructions
- Preheat the oven to 350°F (175°C) and lightly grease a muffin tin.
- In a bowl, mix together rolled oats, baking powder, cinnamon, and salt.
- In another bowl, combine milk, mashed bananas, honey or maple syrup, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until well combined. Gently fold in the blueberries.
- Pour the mixture evenly into the muffin cups, filling each about three-quarters full. Bake for 20-25 minutes or until the tops are golden and a toothpick comes out clean. Let cool before removing from the tin.
Notes
Customize with different fruits or add-ins like nuts or seeds. Store in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 months.
