- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup butter, softened
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 large egg
- 1/2 teaspoon vanilla extract
- 1 cup blueberry jam
- 1/4 cup powdered sugar (for dusting)
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour an 8-inch square baking pan.
- Cream together the softened butter and granulated sugar until light and fluffy.
- Add the egg and vanilla extract to the creamed mixture and mix well.
- In another bowl, combine the flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients.
- Spread half of the batter into the prepared baking pan and spoon blueberry jam over it.
- Spread the remaining batter on top and bake for 30-35 minutes, or until a toothpick comes out clean.
- Allow to cool before slicing and dust with powdered sugar before serving.
