Description

Delightful blueberry jam cake bars that are perfect for brunch or a sweet afternoon snack, combining buttery cake with luscious blueberry jam.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup butter, softened
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1 cup blueberry jam
  • 1/4 cup powdered sugar (for dusting)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour an 8-inch square baking pan.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the egg and vanilla extract to the creamed mixture and mix well.
  4. In another bowl, combine the flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients.
  5. Spread half of the batter into the prepared baking pan and spoon blueberry jam over it.
  6. Spread the remaining batter on top and bake for 30-35 minutes, or until a toothpick comes out clean.
  7. Allow to cool before slicing and dust with powdered sugar before serving.
