Description

A bright, no-bake snack that combines the tangy flavors of lemon cheesecake with sweet blueberries in a crunchy puppy chow mix.


Ingredients

  • 1 cup white chocolate chips
  • 1/4 cup butter
  • 1/2 cup lemon juice
  • 1 teaspoon lemon zest
  • 5 cups Chex cereal
  • 1 cup blueberry muffin mix
  • 1 cup powdered sugar
  • 1 cup blueberries (fresh or dried)

Instructions

  1. Preparation: In a large microwave-safe bowl, place white chocolate chips and butter. Heat in the microwave in 30-second intervals, stirring after each, until melted and smooth.
  2. Mixing: Stir lemon juice and lemon zest into the melted mixture. Then add Chex cereal and fold gently until coated. Stir in blueberry muffin mix.
  3. Cooking: Sprinkle powdered sugar over the mixture and fold until dusted. Spread onto a baking sheet to cool and set, about 20-30 minutes.
  4. Finishing: Once set, gently fold in blueberries. Serve immediately or store as needed.

Notes

If using fresh blueberries, add them just before serving to keep them juicy. For longer storage, opt for dried blueberries.
