Ingredients

- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 large egg
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
- Zest of 1 lemon
- 1 cup blueberries
- Lemon juice for serving
Instructions
- In a bowl, mix the flour, sugar, baking powder, and salt. Zest the lemon and set the blueberries out.
- In another bowl, whisk together the milk, egg, melted butter, vanilla extract, and lemon zest until smooth. Pour the wet mix into the dry ingredients and stir until combined; do not over-stir.
- Gently fold the blueberries into the batter. Preheat a griddle or non-stick skillet over medium heat and grease lightly. Use a tablespoon to pour small amounts of batter onto the skillet. Cook until bubbles form and edges are set, about 2–3 minutes per side.
- Transfer the finished pancake bites to a plate and serve warm with lemon juice or syrup.
Notes
For best results, do not overmix the batter. Serve with yogurt or whipped cream for a delicious twist.
