- 1 head of cauliflower
- 1 cup flour
- 1 cup water
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup buffalo sauce
- 2 tablespoons melted butter
- Celery sticks for serving
- Blue cheese dressing for serving
Instructions
- Preheat the oven to 450°F (232°C). Cut the cauliflower into bite-sized florets.
- In a bowl, mix together flour, water, garlic powder, paprika, salt, and pepper to form a smooth batter.
- Dip each cauliflower floret into the batter, shaking off excess, and place on a baking sheet lined with parchment paper.
- Bake for 20 minutes until the coating sets and starts to turn golden.
- Mix the buffalo sauce with melted butter in a bowl. Toss each floret in the sauce mixture until well coated.
- Return to the oven and bake for an additional 15 minutes, until crispy and slightly caramelized.
- Serve hot with celery sticks and blue cheese dressing.
Notes
For extra crispiness, consider adding panko to the batter or broiling for 1-2 minutes at the end. Store leftovers in an airtight container.
