- 2 cups cooked chicken, shredded
- 1/2 cup buffalo wing sauce
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 4 large flour tortillas
- 2 tablespoons olive oil
- 1/2 cup diced green onions (optional)
- Sour cream and ranch dressing for serving (optional)
Instructions
- In a bowl, mix the shredded chicken with buffalo wing sauce until well coated.
- Heat a large skillet over medium heat and add 1 tablespoon of olive oil.
- Place 1 tortilla in the skillet and sprinkle half of the cheddar and Monterey Jack cheese on one half of the tortilla.
- On top of the cheese, add a layer of the buffalo chicken mixture and sprinkle with green onions if using.
- Top with the remaining cheese, then fold the tortilla over to close it.
- Cook for about 2-3 minutes on each side, until the tortilla is golden brown and the cheese is melted.
- Remove from heat, slice into wedges, and serve with sour cream and ranch dressing if desired.
Notes
For extra flavor, consider using rotisserie chicken or experimenting with different cheeses like pepper jack.
