Description
Delicious Cadbury Egg Cookie Bars combine a soft, chewy cookie base with crunchy candy pieces for a fun and colorful treat.
Ingredients
Scale
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups Cadbury Mini Eggs, crushed
- 1/2 cup chocolate chips
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan. Line the pan with parchment paper for easier removal.
- Cream together the softened butter, granulated sugar, and brown sugar until smooth and slightly fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
- Whisk together the flour, baking soda, and salt in another bowl. Gradually add the dry ingredients to the creamed mixture and mix until just combined.
- Fold in the crushed Cadbury Mini Eggs and chocolate chips gently to maintain candy texture.
- Spread the batter evenly in the prepared baking pan and smooth the top with a spatula. Bake for 25–30 minutes, or until the edges are golden.
- Allow the pan to cool on a wire rack for at least 20 minutes before lifting the bars out. Let them cool fully before slicing into 12 squares.
Notes
For a chewy texture, do not overmix once you add the flour. Use room-temperature ingredients for better texture.
