Description

Delicious Cadbury Egg Cookie Bars combine a soft, chewy cookie base with crunchy candy pieces for a fun and colorful treat.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups Cadbury Mini Eggs, crushed
  • 1/2 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan. Line the pan with parchment paper for easier removal.
  2. Cream together the softened butter, granulated sugar, and brown sugar until smooth and slightly fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  3. Whisk together the flour, baking soda, and salt in another bowl. Gradually add the dry ingredients to the creamed mixture and mix until just combined.
  4. Fold in the crushed Cadbury Mini Eggs and chocolate chips gently to maintain candy texture.
  5. Spread the batter evenly in the prepared baking pan and smooth the top with a spatula. Bake for 25–30 minutes, or until the edges are golden.
  6. Allow the pan to cool on a wire rack for at least 20 minutes before lifting the bars out. Let them cool fully before slicing into 12 squares.

Notes

For a chewy texture, do not overmix once you add the flour. Use room-temperature ingredients for better texture.
