Description

Cajun-spiced chicken meets a creamy Alfredo sauce and bright green broccoli in this satisfying weeknight meal that’s quick to make and full of flavor.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon Cajun seasoning
  • 2 cups broccoli florets
  • 8 ounces fettuccine pasta
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Season the chicken breasts evenly with Cajun seasoning. Heat olive oil in a skillet over medium heat and cook chicken until golden and cooked through, about 6–7 minutes per side. Remove from skillet and let rest before slicing.
  2. In the skillet, add minced garlic and sauté for 1 minute until fragrant.
  3. Pour in heavy cream and bring to a gentle simmer. Stir in grated Parmesan cheese until smooth. Adjust seasoning with salt and pepper.
  4. Cook fettuccine according to package instructions, adding broccoli during the last 3 minutes. Drain and reserve pasta water.
  5. Toss pasta and broccoli with the Alfredo sauce, using reserved pasta water if needed. Top with sliced chicken and garnish with parsley.

Notes

Pound chicken to an even thickness for even cooking. Reserve pasta water to adjust sauce consistency.
