Description

Ingredients

  • 6 medium potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 celery stalk, chopped
  • 4 cups vegetable broth
  • 1 cup milk or cream
  • 2 tablespoons Cajun seasoning
  • Salt and pepper to taste
  • 1/4 cup green onions, chopped (for garnish)
  • 1/4 cup parsley, chopped (for garnish)

Instructions

  1. In a large pot, sauté onions, garlic, bell pepper, and celery until soft for about 5-7 minutes.
  2. Add diced potatoes to the pot along with the vegetable broth. Bring to a boil, then reduce heat and let simmer until potatoes are tender, about 15-20 minutes.
  3. Stir in the Cajun seasoning and milk or cream. Season with salt and pepper to taste.
  4. Blend the soup partially with an immersion blender for a creamy texture while leaving some chunks.
  5. Serve the soup hot, garnished with chopped green onions and parsley.

Notes
