These Caprese Stuffed Avocados are refreshing and easy to make, featuring creamy avocado, juicy tomatoes, and mozzarella, drizzled with a sweet balsamic glaze.

- 2 ripe avocados
- 1 cup cherry tomatoes, halved
- 1 cup fresh mozzarella balls, halved
- Fresh basil leaves
- Salt and pepper to taste
- 1/4 cup balsamic glaze
- Olive oil for drizzling
Instructions
- Cut the avocados in half and remove the pit. Scoop out a little bit of the avocado flesh to create a larger cavity.
- In a bowl, combine cherry tomatoes, mozzarella balls, salt, and pepper. Toss gently so the mozzarella and tomatoes stay intact.
- Fill each avocado half with the tomato and mozzarella mixture, pressing lightly so the filling nests in the cavity.
- Drizzle with balsamic glaze and olive oil, and garnish with fresh basil leaves. Serve immediately.
