Description

These Caprese Stuffed Avocados are refreshing and easy to make, featuring creamy avocado, juicy tomatoes, and mozzarella, drizzled with a sweet balsamic glaze.


Ingredients

  • 2 ripe avocados
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh mozzarella balls, halved
  • Fresh basil leaves
  • Salt and pepper to taste
  • 1/4 cup balsamic glaze
  • Olive oil for drizzling

Instructions

  1. Cut the avocados in half and remove the pit. Scoop out a little bit of the avocado flesh to create a larger cavity.
  2. In a bowl, combine cherry tomatoes, mozzarella balls, salt, and pepper. Toss gently so the mozzarella and tomatoes stay intact.
  3. Fill each avocado half with the tomato and mozzarella mixture, pressing lightly so the filling nests in the cavity.
  4. Drizzle with balsamic glaze and olive oil, and garnish with fresh basil leaves. Serve immediately.
