- 2 large onions, thinly sliced
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1 cup sour cream
- 1 cup cream cheese, softened
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
- Fresh chives, chopped (for garnish)
Instructions
- Heat a large skillet over medium heat. Slice the onions thin and evenly so they cook at the same rate.
- Combine the sour cream, softened cream cheese, and half of the shredded cheddar cheese in a mixing bowl. Blend until smooth and creamy.
- Add the olive oil and butter to the hot skillet. Add the sliced onions and a pinch of salt, cooking until golden and deeply browned, about 20–25 minutes.
- Fold the cooled caramelized onions into the cheese mixture until well combined. Transfer the dip to a serving bowl, sprinkle the remaining cheddar on top, and garnish with chopped chives.
Notes
Serve with chips, toasted bread, or fresh vegetables. Store in an airtight container for up to 4 days.
