Description

A warm, bright soup made with carrots and celery, perfect for a comforting meal.


Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 4–5 minutes, stirring to prevent browning.
  2. Add the chopped carrots and celery to the pot. Cook, stirring occasionally, for about 5–7 minutes until the vegetables begin to soften.
  3. Pour in the vegetable broth and raise the heat until boiling. Lower the heat and simmer gently for 15–20 minutes, until the vegetables are very tender.
  4. Remove the pot from heat and blend the soup until smooth. Season with salt and pepper to taste and serve hot, garnished with fresh parsley.

Notes

For a creamier texture, blend in some coconut milk or butter before serving.
