- 1 cup granulated sugar
- 1/2 cup brown sugar
- 3 large eggs
- 2 cups grated carrots
- 1/2 cup crushed pineapple, drained

- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper.
- In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg. In a large bowl, cream softened butter with granulated and brown sugars until light and fluffy. Add eggs one at a time, beating well after each. Stir in grated carrots, drained pineapple, and chopped nuts. Gradually fold in dry ingredients until just combined.
- Pour the batter into the prepared pan and smooth the top. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Cool in the pan on a wire rack for 15-20 minutes.
- While bars cool, beat softened cream cheese with powdered sugar and vanilla until smooth. Spread the frosting over the cooled bars. Chill for 20-30 minutes to set the frosting before cutting into 12 bars.
