Description

Soft, chewy cookies that blend grated carrot and oats with cozy spices for a carrot cake flavor in every bite.


Ingredients

  • 1 cup rolled oats
  • 1 cup grated carrots
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup vegetable oil or melted coconut oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup raisins or walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, stir together the rolled oats, grated carrots, flour, brown sugar, granulated sugar, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In a separate bowl, whisk the oil, egg, and vanilla extract until smooth. Pour the wet mix into the dry mix and stir until just combined. Fold in raisins or walnuts if using.
  4. Drop spoonfuls of dough onto the prepared baking sheet, leaving space between cookies. Bake for 10–12 minutes, until edges are golden brown.
  5. Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For softer cookies, slightly underbake. Store in an airtight container for up to 3 days; freeze for longer storage.
