Description

Delicious Cauliflower Burrito Bowls with crispy roasted cauliflower and creamy Jalapeño Ranch, perfect for a healthy lunch or dinner.


Ingredients

Scale
  • 1 head cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 2 cups cooked rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn, fresh or canned
  • 1 avocado, sliced
  • Fresh cilantro for garnish
  • 1/2 cup Greek yogurt (or sour cream)
  • 1/4 cup mayonnaise
  • 23 jalapeños, chopped
  • 2 tablespoons lime juice
  • 1 teaspoon garlic powder

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss cauliflower florets with olive oil, chili powder, cumin, salt, and pepper.
  3. Spread seasoned cauliflower on a baking sheet and roast for 20-25 minutes until golden and tender.
  4. While roasting, prepare the Jalapeño Ranch by blending Greek yogurt, mayonnaise, jalapeños, lime juice, garlic powder, and salt until smooth.
  5. Assemble bowls with layers of rice, black beans, corn, roasted cauliflower, and avocado.
  6. Drizzle with Jalapeño Ranch and garnish with fresh cilantro.

Notes

Store leftovers in airtight containers in the refrigerator for up to 3 days. For best results, reheat by lightly roasting the cauliflower again.
