Delicious Cauliflower Burrito Bowls with crispy roasted cauliflower and creamy Jalapeño Ranch, perfect for a healthy lunch or dinner.

- 1 head cauliflower, cut into florets
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- Salt and pepper to taste
- 2 cups cooked rice
- 1 can black beans, drained and rinsed
- 1 cup corn, fresh or canned
- 1 avocado, sliced
- Fresh cilantro for garnish
- 1/2 cup Greek yogurt (or sour cream)
- 1/4 cup mayonnaise
- 2–3 jalapeños, chopped
- 2 tablespoons lime juice
- 1 teaspoon garlic powder
Instructions
- Preheat your oven to 425°F (220°C).
- Toss cauliflower florets with olive oil, chili powder, cumin, salt, and pepper.
- Spread seasoned cauliflower on a baking sheet and roast for 20-25 minutes until golden and tender.
- While roasting, prepare the Jalapeño Ranch by blending Greek yogurt, mayonnaise, jalapeños, lime juice, garlic powder, and salt until smooth.
- Assemble bowls with layers of rice, black beans, corn, roasted cauliflower, and avocado.
- Drizzle with Jalapeño Ranch and garnish with fresh cilantro.
Notes
Store leftovers in airtight containers in the refrigerator for up to 3 days. For best results, reheat by lightly roasting the cauliflower again.
