Ingredients

- 1 head of cauliflower, chopped
- 1 bulb of garlic, roasted
- 4 cups vegetable broth
- 1 cup cheddar cheese, shredded
- 1 onion, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1/2 cup heavy cream (optional)
Instructions
- Heat 2 tablespoons olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent and soft, about 5–7 minutes.
- Add the chopped cauliflower and roasted garlic cloves. Pour in 4 cups vegetable broth, bring to a boil, then reduce to a simmer.
- Simmer until the cauliflower is tender, about 15–20 minutes. Blend the soup until smooth using an immersion blender.
- Return the pot to low heat, stir in the shredded cheddar cheese until melted, and season with salt and pepper. Stir in heavy cream if desired before serving.
Notes
For the best texture, use an immersion blender and blend until very smooth. Avoid high heat after adding the cheese to prevent clumping.
