Description

A quick and comforting side that tastes like a creamy casserole, combining broccoli and cauliflower rice in a cheesy sauce.


Ingredients

  • 1 head cauliflower, riced
  • 2 cups broccoli florets
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese
  • 1/2 cup vegetable or chicken broth
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Optional: garlic powder, onion powder

Instructions

  1. In a large pan, melt the butter over medium heat. Ensure the riced cauliflower is ready and the broccoli is washed and cut into small florets.
  2. Add the riced cauliflower and broccoli florets to the pan. Sauté, stirring often, until the vegetables soften and the cauliflower starts to become tender, about 5–7 minutes.
  3. Pour in the broth and bring the mixture to a gentle simmer. Stir in the cream cheese and shredded cheddar cheese until they melt and the mixture becomes smooth and creamy. Season with salt, pepper, and optional garlic powder and onion powder to taste.
  4. Cook for an additional 2–3 minutes, stirring so the sauce thickens slightly and everything is heated through. Serve warm.

Notes

For best results, don’t overcook the vegetables to maintain texture. Adjust seasoning as needed, and customize with your favorite spices.
