A simple, satisfying weeknight meal blending taco seasoning, salsa, and melty cheese with hearty rice.

- 2 cups cooked rice
- 1 lb chicken breast, diced
- 1 packet taco seasoning
- 1 cup shredded cheddar cheese
- 1 can black beans, drained and rinsed
- 1 cup corn
- 1 cup salsa
- 1 tablespoon olive oil
- Chopped green onions (for garnish)
Instructions
- In a large skillet, heat the olive oil over medium heat. If your chicken is not diced, cut it into 1/2-inch pieces. Pat the chicken dry and season lightly if desired.
- Add the diced chicken to the hot skillet and cook, stirring, until cooked through, about 6–8 minutes.
- Stir in the taco seasoning, black beans, corn, and salsa. Cook and stir until heated through, about 3–4 minutes. Add the cooked rice and mix well to combine.
- Sprinkle shredded cheddar cheese evenly over the top. Cover the skillet for a few minutes to melt the cheese. Garnish with chopped green onions and serve warm.
Notes
For a spicier version, add chopped jalapeño or hot sauce. This dish can easily be customized with different proteins or vegetables.
