Description

Ingredients

  • 2 medium potatoes
  • 4 large eggs
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 onion, diced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Chopped chives or parsley for garnish (optional)

Instructions

  1. Peel and dice the potatoes into small cubes. Boil or steam until tender, about 10 minutes. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add diced onions and sauté until soft and translucent, about 3-4 minutes.
  3. Add the cooked potatoes to the skillet and cook a few more minutes until slightly crispy on the edges.
  4. In a separate bowl, whisk the eggs with salt and pepper. Pour the mixture over the potato mixture in the skillet. Stir gently until the eggs are fully scrambled and then add shredded cheese, mixing until melted. Serve hot, garnished with chopped chives or parsley if desired.
