- 2 cups grated potatoes
- 1 cup cooked, shredded chicken
- 1 cup mozzarella cheese, shredded
- 1/4 cup all-purpose flour
- 1 large egg
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Oil for frying
Instructions
- In a bowl, mix the grated potatoes, shredded chicken, mozzarella cheese, flour, egg, salt, and pepper until well combined.
- Heat oil in a frying pan over medium heat.
- Scoop a portion of the mixture and flatten it into a pancake shape.
- Cook each pancake for about 4-5 minutes on each side or until golden brown and crispy.
- Remove from the pan and drain on paper towels.
- Serve hot.
Notes
For extra flavor, serve with sour cream and chives or alongside roasted vegetables.
