Description

Crispy, golden potato pancakes filled with tender chicken and gooey mozzarella cheese, perfect for breakfast, brunch, or a light dinner.


Ingredients

  • 2 cups grated potatoes
  • 1 cup cooked, shredded chicken
  • 1 cup mozzarella cheese, shredded
  • 1/4 cup all-purpose flour
  • 1 large egg
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Oil for frying

Instructions

  1. In a bowl, mix the grated potatoes, shredded chicken, mozzarella cheese, flour, egg, salt, and pepper until well combined.
  2. Heat oil in a frying pan over medium heat.
  3. Scoop a portion of the mixture and flatten it into a pancake shape.
  4. Cook each pancake for about 4-5 minutes on each side or until golden brown and crispy.
  5. Remove from the pan and drain on paper towels.
  6. Serve hot.

For extra flavor, serve with sour cream and chives or alongside roasted vegetables.
