Description
Cheesy Taco Potatoes combine fluffy baked potatoes with savory taco-seasoned meat, gooey cheddar cheese, and cool sour cream for a comforting weeknight dish.
Ingredients
Scale
- 4 large potatoes
- 1 cup cooked ground beef or turkey
- 1 packet taco seasoning
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 1/2 cup chopped green onions
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C). Wash the potatoes well and poke holes in each potato with a fork; rub with oil and sprinkle with salt.
- Place the potatoes on a baking sheet and bake for 45–60 minutes until tender.
- While the potatoes bake, heat a skillet over medium heat and add the cooked ground beef or turkey, along with the taco seasoning and a splash of water. Cook until heated through, about 3–5 minutes.
- Remove the potatoes from the oven, cut open lengthwise, and fluff the insides with a fork. Stuff the potatoes with taco meat, top with shredded cheddar, and return to the oven for 3–5 minutes or until cheese melts. Serve with sour cream and green onions.
Notes
For crispier skins, rub potatoes with oil and salt before baking. Use freshly shredded cheese for better melting.
