- 2 cups cooked chicken, shredded
- 1 can black beans, rinsed and drained
- 1 can corn, drained
- 1 packet taco seasoning
- 1 cup salsa
- 2 cups shredded cheddar cheese
- 8 small tortillas, quartered
- 1 cup sour cream
- Chopped green onions for garnish
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the shredded chicken, black beans, corn, taco seasoning, and salsa, mixing until evenly coated.
- In a greased 9×13 inch baking dish, layer half of the tortillas, then half of the chicken mixture, followed by half of the cheddar cheese. Repeat the layers with the remaining tortillas, chicken mixture, and cheese.
- Bake for 25-30 minutes until the cheese is melted and bubbly.
- Let it cool for a few minutes before serving.
- Top with sour cream and garnish with chopped green onions.
Notes
Use rotisserie chicken for quicker prep. Adjust spiciness by using spicier salsa or adding jalapeños.
