  • 2 cups cooked chicken, shredded
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup salsa
  • 1 teaspoon taco seasoning
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 cup tortilla chips, crushed
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped green onions

Instructions

  1. Preheat your oven to 350°F (175°C). Ensure all your ingredients are ready for easy assembly.
  2. In a large bowl, combine the shredded chicken, black beans, corn, salsa, and taco seasoning. Stir until evenly mixed.
  3. In a baking dish, layer half of the chicken mixture at the bottom. Top this with half of the shredded cheese and half of the crushed tortilla chips.
  4. Repeat the layers with the remaining chicken mixture, cheese, and tortilla chips. Finally, sprinkle the diced tomatoes and chopped green onions on top.
  5. Bake in the preheated oven for 25-30 minutes or until the dish is heated through and the cheese is bubbly and golden. Serve warm and enjoy!

Notes

Use leftover rotisserie chicken for quick preparation. This casserole can be made in advance and refrigerated before baking.
