- 2 cups cooked chicken, shredded
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 packet taco seasoning
- 1 1/2 cups salsa
- 2 cups shredded cheese (cheddar or Mexican blend)
- Tortillas
- 1/2 cup sour cream (optional)
Instructions
- Preheat the oven to 350°F (175°C). Gather all your ingredients for a smooth cooking process.
- In a large bowl, combine the shredded chicken, black beans, corn, taco seasoning, and salsa. Mix gently to meld the flavors.
- Layer half of the tortillas in a greased 9×13 inch baking dish. Spread half of the chicken mixture over the tortillas, followed by half of the cheese. Repeat the layers with the remaining ingredients.
- Bake for 25-30 minutes or until the cheese is melted and bubbly. Let cool slightly before serving.
