Description

A hearty and comforting casserole that combines the bold flavors of tacos with layers of chicken, cheese, and beans, perfect for busy weeknights.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 packet taco seasoning
  • 1 1/2 cups salsa
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • Tortillas
  • 1/2 cup sour cream (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Gather all your ingredients for a smooth cooking process.
  2. In a large bowl, combine the shredded chicken, black beans, corn, taco seasoning, and salsa. Mix gently to meld the flavors.
  3. Layer half of the tortillas in a greased 9×13 inch baking dish. Spread half of the chicken mixture over the tortillas, followed by half of the cheese. Repeat the layers with the remaining ingredients.
  4. Bake for 25-30 minutes or until the cheese is melted and bubbly. Let cool slightly before serving.
