Ingredients

- 2 cups cooked chicken, shredded
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes with green chilies
- 1 cup tortilla chips, crushed
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 packet taco seasoning
- 1/2 cup sour cream
- Fresh cilantro for garnish (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the shredded chicken, black beans, corn, diced tomatoes, taco seasoning, and sour cream. Mix until fully combined.
- In a greased 9×13 inch baking dish, spread half of the crushed tortilla chips on the bottom.
- Pour the chicken mixture over the chips and spread it out evenly. Top with the remaining tortilla chips and then sprinkle the shredded cheese over the top.
- Bake for 25-30 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh cilantro if desired before serving.
Notes
For spicier versions, use hot taco seasoning or add chopped jalapeños. Substitute shredded rotisserie chicken for convenience.
