Description

A one-pan meal combining tender chicken, zesty spices, and cheesy goodness, perfect for busy weeknights and casual get-togethers.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 cup tortilla chips, crushed
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 packet taco seasoning
  • 1/2 cup sour cream
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, black beans, corn, diced tomatoes, taco seasoning, and sour cream. Mix until fully combined.
  3. In a greased 9×13 inch baking dish, spread half of the crushed tortilla chips on the bottom.
  4. Pour the chicken mixture over the chips and spread it out evenly. Top with the remaining tortilla chips and then sprinkle the shredded cheese over the top.
  5. Bake for 25-30 minutes, or until the cheese is melted and bubbly.
  6. Garnish with fresh cilantro if desired before serving.

Notes

For spicier versions, use hot taco seasoning or add chopped jalapeños. Substitute shredded rotisserie chicken for convenience.
