Description

A simple, homey dish featuring chicken simmered in a tangy, garlicky sauce enriched with white wine and red wine vinegar for added flavor.


Ingredients

  • 4 chicken thighs
  • 4 chicken drumsticks
  • 1/4 cup olive oil
  • 4 garlic cloves, minced
  • 1/2 cup white wine
  • 1 cup chicken broth
  • 1/4 cup red wine vinegar
  • 1/2 teaspoon red pepper flakes
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley

Instructions

  1. Season the chicken thighs and drumsticks with salt and pepper. Pat them dry with paper towels to ensure even browning.
  2. In a skillet, heat the olive oil over medium-high heat. Add the chicken pieces and brown on all sides (3-5 minutes per side), then remove and set aside.
  3. Add minced garlic to the same skillet and cook for 1 minute until fragrant. Pour in white wine and scrape the bottom of the pan to release browned bits.
  4. Add chicken broth, red wine vinegar, and red pepper flakes. Return chicken to the skillet, reduce heat to medium-low, cover, and simmer for about 30 minutes until tender.
  5. Uncover and simmer for an additional 2-3 minutes if desired for a thicker sauce. Adjust seasoning and garnish with parsley before serving.

Notes

For best results, avoid overcrowding the pan when browning chicken. Serve with rice, bread, or pasta to soak up the sauce.
