Description

A bright, smoky, and satisfying meal featuring lime-marinated chicken, warm rice, creamy avocado, sweet corn, and hearty black beans.


Ingredients

  • 2 chicken breasts
  • 1 cup cooked rice (white or brown)
  • 1 cup black beans (canned or cooked)
  • 1 cup corn (canned or frozen)
  • 1/2 cup diced tomatoes
  • 1 avocado, sliced
  • 1/4 cup chopped cilantro
  • 1 lime, juiced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine olive oil, lime juice, chili powder, salt, and pepper. Whisk until smooth.
  2. Marinate the chicken breasts in the mixture for at least 30 minutes.
  3. Grill or sauté the chicken until fully cooked and then slice.
  4. Layer rice, black beans, corn, diced tomatoes, sliced avocado, and sliced chicken in a bowl.
  5. Top with chopped cilantro and additional lime juice to taste.

Notes

Serve warm with a wedge of lime for extra brightness. Use hot rice right after cooking to keep the bowl warm.
