Description

A moist and rich chocolate cake that uses mayonnaise for an unexpected twist on a classic recipe.


Ingredients

  • 1 3/4 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup mayonnaise
  • 1 cup water
  • 2 large eggs
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, combine the all-purpose flour, cocoa powder, granulated sugar, baking powder, baking soda, and salt. Whisk until blended.
  3. In another bowl, whisk together the mayonnaise, water, eggs, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix until well combined, creating a thick, glossy batter.
  5. Divide the batter evenly between the prepared cake pans. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  6. Allow the cakes to cool in the pans for 10 minutes. Then, gently remove and let cool completely on a wire rack.
  7. Once cool, frost with your favorite chocolate frosting, if desired.

Notes

Use room temperature ingredients for better mixing. Don’t skip greasing the pans to prevent sticking.
