A moist and rich chocolate cake that uses mayonnaise for an unexpected twist on a classic recipe.

- 1 3/4 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 2 cups granulated sugar
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 1 cup mayonnaise
- 1 cup water
- 2 large eggs
- 2 teaspoons vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, combine the all-purpose flour, cocoa powder, granulated sugar, baking powder, baking soda, and salt. Whisk until blended.
- In another bowl, whisk together the mayonnaise, water, eggs, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and mix until well combined, creating a thick, glossy batter.
- Divide the batter evenly between the prepared cake pans. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes. Then, gently remove and let cool completely on a wire rack.
- Once cool, frost with your favorite chocolate frosting, if desired.
Notes
Use room temperature ingredients for better mixing. Don’t skip greasing the pans to prevent sticking.
