Description

Fudgy, crackly cookies dusted in powdered sugar with a soft, chewy center and crisp exterior.


Ingredients

  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup powdered sugar (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Mix together the granulated sugar and vegetable oil until well combined. Add the eggs and vanilla extract, and mix until smooth.
  3. Whisk together the flour, cocoa powder, baking powder, and salt in another bowl. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  4. Refrigerate the dough for about 30 minutes to make it easier to handle.
  5. Roll the dough into 1-inch balls and coat in powdered sugar.
  6. Place the balls on a baking sheet, spaced about 2 inches apart. Bake for 10–12 minutes until puffy and cracked on top.
  7. Cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Store in an airtight container at room temperature for up to 3 days or refrigerate for up to 7 days. Can freeze well for up to 3 months.
