Description

Delightful bite-sized cookies that capture the essence of traditional fruitcake with a blend of spices, mixed dried fruits, and optional chocolate chips.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 1 cup mixed dried fruit (raisins, cranberries, apricots)
  • 1 cup nuts (walnuts or pecans), chopped
  • 1 cup chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together butter, brown sugar, and granulated sugar until smooth.
  3. Beat in eggs and vanilla extract until well combined.
  4. In another bowl, mix flour, baking soda, cinnamon, nutmeg, and salt; gradually add to the butter mixture.
  5. Fold in dried fruit, nuts, and chocolate chips if using.
  6. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes or until edges are golden.
  8. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For best results, use room temperature butter and store cookies in an airtight container.
