Description

Ingredients

  • 3 to 4 pounds pot roast
  • 2 cups apple cider
  • 1 onion, chopped
  • 3 carrots, chopped
  • 3 celery stalks, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a large Dutch oven, heat olive oil over medium-high heat. Season the pot roast with salt and pepper, and sear on all sides for 4–5 minutes per side.
  3. Remove the roast and cook chopped onion, carrots, celery, and minced garlic until tender, about 5 minutes.
  4. Return the seared pot roast to the pot, add apple cider, thyme, and rosemary. Bring to a simmer, cover, and transfer to the oven. Braise for about 3 hours, until meat is tender.
  5. Let the roast rest for a few minutes before slicing, and serve with the braising liquid.

Notes

For added flavor, consider marinating the roast in cider overnight or incorporating different root vegetables.
