- 3 to 4 pounds pot roast
- 2 cups apple cider
- 1 onion, chopped
- 3 carrots, chopped
- 3 celery stalks, chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
Instructions
- Preheat the oven to 325°F (160°C).
- In a large Dutch oven, heat olive oil over medium-high heat. Season the pot roast with salt and pepper, and sear on all sides for 4–5 minutes per side.
- Remove the roast and cook chopped onion, carrots, celery, and minced garlic until tender, about 5 minutes.
- Return the seared pot roast to the pot, add apple cider, thyme, and rosemary. Bring to a simmer, cover, and transfer to the oven. Braise for about 3 hours, until meat is tender.
- Let the roast rest for a few minutes before slicing, and serve with the braising liquid.
Notes
For added flavor, consider marinating the roast in cider overnight or incorporating different root vegetables.
